Sweet Cottage Cheese Balls
First of all, wishing everyone Ramadan Mubarak, Ramadhan Kareem. May this month be a blessed one.
I started off my Ramadan celebrating with a traditional Pakistani sweet dish called Rasmalai. Usually I am not a big fan of traditional Pakistani sweets. Most of them are far too sweet for me. But when you make sweets at home you can control how sweet you want it to be. Basically I discovered this sweet dish while watching a tv program. My mum requested me to make Rasmalai for her so I tried making this indo/pak recipe AND it turned out extremely lekker. I have tried Rasmalai from different shops already and never found them that tasty. So this sweet is surely worth trying. The greatest part of this recipe is that it only has 3 main ingredients for the Cheese balls.
So here is the easy recipe for you:
- 1 cup Milk powder [Nido]
- 1/2 tsp Baking powder
- 1 Egg (medium size)
- 1 Liter of Milk
- 5 Cardamom
- 1/2 cup of sugar
- In a bowl mix together the milk powder and baking powder.
- Add the beaten egg and knead it to a dough.
- Let the dough sit for 5 minutes
- Then make small equal sized balls.
- In another pot boil 1L of milk and add cardamom & sugar.
- When the sugar is dissolved, add the kneaded balls into it and let it cook for 8 mins with the lid closed.
- Ones cooked serve with cut pistachios and almonds.
- The dough has to become non-sticky. If it is too liquid you may add on more milk powder.
- You know the constancy is right if the dough is cracking a little.
- The most difficult part is making the balls as the dough may fall apart. So try forming the balls with the help of your palm. Press it into tight balls then flatten it a little.
- Keep an eye while cooking. If you overcook it, the Cheese balls may burst in the milk.
